Apple Pie la terapia antistress

Giornataccia, sono nervosa, direi quasi isterica. Arrivo a casa con la voglia di fare qualcosa di pratico per svuotare la testa ...la terapia migliore è cucinare, impastare, tagliare e poi vedere che quello che faccio diventa una cosa reale buona e bella.

Farò l'apple pie, non troppo difficile, non troppo ingrassante, non troppo lunga o laboriosa da fare con pochi semplici ingredienti.
La pasta frolla si può anche comprare già pronta, bella sottile e rotonda, ma a me piace farla, tanto un po' di tempo per calmarmi ci vuole... e mescolare con forza la farina, il burro e lo zucchero, sbriciolare l'impasto fra le dita senza lavorarlo troppo ché il calore scioglie il burro, fino a che diventa una bella massa consistente..... è quello che mi serve!

Hard day, I'm stressed and nervous, and when I get home, I feel like I need to do something handy to relax and clear my head. The best way is cooking, kneading, cutting, and waiting for the final result.
I will make an apple pie, which is not too difficult, not too fattening, not too long, with a few simple ingredients.
I could use the ready-to-use shortcrust pie pastry, thin and perfectly round, but i like to do it by myself. Anyway, I need time to calm down. Mixing the flour, sugar and butter to combine the mixture is perfect therapy - not too much though; otherwise the butter melts - until it is done...this is what I need!

Poi le mele, ci sono così tante varietà, le rosse e croccanti stark, le gialle e più morbide renette, le nuove ... prima non c'erano...Fuji, saranno giapponesi? saporite e belle compatte, ma per questa torta sono ideali le Granny Smith, verdi e aspre, fanno molto nonna papera.. comunque una vale l'altra, basta siano mele.

Ne prendo 4 belle grosse, le pelo e taglio a spicchi precisi - oppure in pezzi irregolari, a casaccio - anche questo è terapeutico, dipende dal mood...

A questo punto le metto in padella con zucchero, burro, cannella senza dosi precise, faccio un po' a caso, fino a che mi sento soddisfatta, cuocio per 10 minuti e poi trasferisco il tutto nella teglia foderata di carta forno, magica invenzione.

For this recipe, the ideal apples are the Granny Smith, green and sour...reminds you of Grandma Duck...however, one is good as another, they just have to be apples!

I cut 4 big apples in precise slices or in irregular slices. This is also part of the therapy, it depends on my mood.
At this point, I put them in a pan with sugar, butter, cinnamon with no exact measurements, until I feel satisfied. I bake them for 10 minutes and then transfer the mixture into a pan lined with parchment paper, a truly magical invention.

Ricopro con le mele cotte, una manciata di pan grattato che assorbe - così la pasta non resta molle - e ricopro con la con la seconda sfoglia , pigio bene bene i lati, bucherello con una forchetta per far uscire il vapore e metto in forno per una mezz'oretta quando è croccante e dorata fuori e morbida dentro è pronta. Il profumo conforta, l'aspetto pure... non resta che mangiarla..

Cover with the other pastry, press well into the borders, and with a fork, I poke small holes to allow the steam to be released. Cook in the oven for 30 minutes. When the crust is golden, crunchy outside and soft inside, it is ready - the smell is reassuring, I can't wait to taste it!
